Description

A warm and creamy Cheesy Orzo Pasta dish that’s perfect for family gatherings and quick weeknight meals.


Ingredients

Scale
  • 2 cups chicken broth
  • 3 cups water
  • 1 1/2 cups orzo
  • 1 tablespoon butter
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon lemon zest
  • 11/2 cups Colby Jack cheese (grated)

Instructions

  1. In a medium saucepan, add chicken broth and water. Bring it to a gentle boil over medium-high heat.
  2. Add orzo to the boiling broth-water mixture. Reduce the heat to a simmer, cover, and let it cook for 8-10 minutes.
  3. Before draining, reserve about 1/2 cup of the starchy pasta water.
  4. Carefully drain the orzo but return it to the pan (off the heat).
  5. Mix in butter, salt, black pepper, lemon zest, and grated cheese. Stir until everything is combined.
  6. Stir in splashes of reserved pasta water for creaminess.
  7. Taste and adjust seasoning as needed.
  8. Ladle into bowls and enjoy!

Notes

Store leftovers in an airtight container for up to 3 days in the fridge. Reheat with a splash of broth for moisture.
