A warm and creamy Cheesy Orzo Pasta dish that’s perfect for family gatherings and quick weeknight meals.
Ingredients

- 2 cups chicken broth
- 3 cups water
- 1 1/2 cups orzo
- 1 tablespoon butter
- 1/2 teaspoon kosher salt
- 1/8 teaspoon ground black pepper
- 1/4 teaspoon lemon zest
- 1 – 1/2 cups Colby Jack cheese (grated)
Instructions
- In a medium saucepan, add chicken broth and water. Bring it to a gentle boil over medium-high heat.
- Add orzo to the boiling broth-water mixture. Reduce the heat to a simmer, cover, and let it cook for 8-10 minutes.
- Before draining, reserve about 1/2 cup of the starchy pasta water.
- Carefully drain the orzo but return it to the pan (off the heat).
- Mix in butter, salt, black pepper, lemon zest, and grated cheese. Stir until everything is combined.
- Stir in splashes of reserved pasta water for creaminess.
- Taste and adjust seasoning as needed.
- Ladle into bowls and enjoy!
Notes
Store leftovers in an airtight container for up to 3 days in the fridge. Reheat with a splash of broth for moisture.
