- 2 cups mashed potatoes
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- 1 egg
- 1/2 cup breadcrumbs (panko or regular)
- 1/4 cup chopped green onions
- Salt and pepper to taste
- Oil for frying (canola or any neutral oil)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the mashed potatoes, shredded cheese, egg, green onions, salt, and pepper. Mix well until everything is evenly incorporated.
- Form the mixture into small puffs or balls about 1-2 inches in diameter and roll them in the breadcrumbs to coat evenly.
- Arrange on a greased baking sheet, leaving space between the puffs.
- Bake for 20-25 minutes until golden brown and crispy.
- Let them cool slightly before serving warm.
Notes
For extra crunch, consider double-dipping the puffs in breadcrumbs. Store leftovers in an airtight container in the fridge for up to 3 days.
