Description

Crispy on the outside, soft and cheesy on the inside, these Cheesy Mashed Potato Puffs are the perfect comfort snack for any occasion.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 egg
  • 1/2 cup breadcrumbs (panko or regular)
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Oil for frying (canola or any neutral oil)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the mashed potatoes, shredded cheese, egg, green onions, salt, and pepper. Mix well until everything is evenly incorporated.
  3. Form the mixture into small puffs or balls about 1-2 inches in diameter and roll them in the breadcrumbs to coat evenly.
  4. Arrange on a greased baking sheet, leaving space between the puffs.
  5. Bake for 20-25 minutes until golden brown and crispy.
  6. Let them cool slightly before serving warm.

Notes

For extra crunch, consider double-dipping the puffs in breadcrumbs. Store leftovers in an airtight container in the fridge for up to 3 days.
