Description

A comforting one-dish meal combining ground beef, layered potatoes, and melted cheese, evoking nostalgic flavors of home cooking.


Ingredients

  • 1 ½ lbs ground beef (or ground turkey)
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 56 medium russet potatoes (thinly sliced, about 1/8 inch)
  • 2 cups shredded cheddar cheese (divided)
  • 1 cup shredded mozzarella (optional)
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
  • 1 cup milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika (optional)
  • 1 tbsp olive oil or butter (for greasing the dish)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet over medium heat, brown the ground beef with the chopped onion until fully cooked, about 7-10 minutes. Drain excess fat and stir in the minced garlic, salt, black pepper, and optional paprika.
  3. In a medium-sized bowl, whisk together the cream of mushroom soup and milk until smooth.
  4. Layer half of the sliced potatoes in the bottom of the greased baking dish, followed by half the beef mixture, half the sauce, and 1 cup of cheddar cheese. Repeat the layers with the remaining ingredients.
  5. Cover the dish with foil and bake for 45 minutes. Then, remove the foil and bake for an additional 15-20 minutes until the potatoes are tender and the cheese is bubbly and golden brown.
  6. Let the casserole rest for about 5 minutes before serving.

Notes

This casserole can be customized with different meats or vegetables. Store leftovers in the fridge for 3-4 days or freeze for up to 3 months.
