Description

Ingredients

  • 2 tablespoons taco seasoning
  • 1 package Mexican rice (5.4 ounces)
  • 2 cups water
  • 1 can diced tomatoes, undrained

  • 32 ounces Velveeta cheese
  • Tortilla chips, for dipping

Instructions

  1. Brown the ground beef in a large skillet over medium heat for 7-10 minutes until fully cooked.
  2. Drain excess grease, then add taco seasoning, Mexican rice, water, diced tomatoes, and vegetable oil. Bring to a boil, cover, and let simmer for 7 minutes until rice is cooked.
  3. Stir in Velveeta cheese, allowing to melt for 3-5 minutes until silky-smooth.
  4. Serve warm with tortilla chips.
