- 1 package Mexican rice (5.4 ounces)
- 2 cups water
- 1 can diced tomatoes, undrained
- 1 tablespoon vegetable oil
- 32 ounces Velveeta cheese
- Tortilla chips, for dipping
Instructions
- Brown the ground beef in a large skillet over medium heat for 7-10 minutes until fully cooked.
- Drain excess grease, then add taco seasoning, Mexican rice, water, diced tomatoes, and vegetable oil. Bring to a boil, cover, and let simmer for 7 minutes until rice is cooked.
- Stir in Velveeta cheese, allowing to melt for 3-5 minutes until silky-smooth.
- Serve warm with tortilla chips.
