Ingredients

  • 2 lbs shelf-stable or refrigerated gnocchi (gluten-free if needed)
  • 7 cups chopped fresh broccoli florets (about 2 heads)
  • 2 cups chicken or vegetable broth
  • 2 tsp garlic powder
  • 2 tsp dried parsley (or 1 tbsp fresh)
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp red pepper flakes (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • 8 oz cream cheese, cubed
  • 4 cups shredded mozzarella, divided
  • Optional: fresh parsley for garnish

Instructions

  1. In a large deep skillet or Dutch oven, combine the gnocchi, chopped broccoli, broth, garlic powder, dried parsley, paprika, onion powder, red pepper flakes (if using), salt, and black pepper. Stir gently to mix.
  2. Bring the mixture to a simmer over medium heat. Cover and cook for about 6–8 minutes, until the broccoli is tender and the gnocchi is cooked through.
  3. Reduce the heat to low. Stir in the cubed cream cheese and 2 cups of shredded mozzarella until everything is smooth and creamy.
  4. Sprinkle the remaining mozzarella over the top of the skillet. Cover and let it melt for 2 minutes or broil uncovered for a minute or two.
  5. Garnish with fresh parsley if desired and serve warm, right from the skillet.

Notes

Ensure cream cheese is at room temperature for easier mixing. Leftovers can be stored in an airtight container in the fridge for up to 4 days.
