- 2 lbs beef (chuck or brisket)
- 2 cups beef broth (low-sodium)
- 2–3 dried guajillo chiles
- 1–2 dried pasilla chiles
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded cheese (Oaxaca or mozzarella)
- 8–10 corn tortillas
- Cilantro and onion (for garnishing)
- Lime wedges (for serving)
Instructions
- In a large pot, combine the beef, beef broth, guajillo chiles, pasilla chiles, garlic powder, onion powder, cumin, salt, and black pepper. Bring to a boil, then simmer covered for about 2-3 hours until tender.
- Remove the beef, let it cool slightly, and shred it. Reserve the broth for dipping.
- Preheat a skillet. Heat a tortilla briefly, layer with cheese and shredded beef, then fold.
- Crisp the taco for 1-2 minutes until the cheese melts and tortilla is golden brown.
- Serve with cilantro, onion slices, and lime wedges. Warm the broth for dipping.
Notes
For extra crispiness, brush tortillas with melted butter before frying. Leftovers can be stored in the fridge for up to 3 days.
