  • 3 cups (400g) diced potatoes (about 2 medium)
  • 1 (14.5oz) can diced tomatoes, undrained
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup (240ml) beef broth
  • 2 cups (230g) shredded cheddar cheese
  • 2 green onions, sliced (for garnish)
  • 1 tbsp olive oil

Instructions

  1. Brown beef: Heat oil in large skillet over medium-high. Add beef and cook until browned (5-6 mins). Drain excess fat.
  2. Sauté veggies: Add onion, bell pepper, and garlic; cook 3 minutes until softened.
  3. Add potatoes: Stir in potatoes, tomatoes, spices, salt, pepper, and broth. Bring to simmer.
  4. Cook covered: Reduce heat to medium-low, cover, and cook 15 minutes until potatoes are tender.
  5. Add cheese: Sprinkle cheese evenly over top. Cover again for 2-3 minutes until melted.
  6. Garnish & serve: Top with green onions. Serve hot directly from skillet.
