- 1 lb (450g) lean ground beef
- 1 small onion, diced
- 1 bell pepper (any color), diced
- 2 cloves garlic, minced
- 3 cups (400g) diced potatoes (about 2 medium)
- 1 (14.5oz) can diced tomatoes, undrained
- 1 tsp chili powder
- 1 tsp ground cumin
- ½ tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- 1 cup (240ml) beef broth
- 2 cups (230g) shredded cheddar cheese
- 2 green onions, sliced (for garnish)
- 1 tbsp olive oil
Instructions
- Brown beef: Heat oil in large skillet over medium-high. Add beef and cook until browned (5-6 mins). Drain excess fat.
- Sauté veggies: Add onion, bell pepper, and garlic; cook 3 minutes until softened.
- Add potatoes: Stir in potatoes, tomatoes, spices, salt, pepper, and broth. Bring to simmer.
- Cook covered: Reduce heat to medium-low, cover, and cook 15 minutes until potatoes are tender.
- Add cheese: Sprinkle cheese evenly over top. Cover again for 2-3 minutes until melted.
- Garnish & serve: Top with green onions. Serve hot directly from skillet.

- For extra crispiness: Broil 2-3 minutes after adding cheese
