Description

A comforting bowl of deliciousness that combines the flavors of a classic cheeseburger into a warm, hearty soup.


Ingredients

  • 1 pound lean ground beef
  • Kosher salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 sweet onion, diced
  • 1 cup freshly grated carrots
  • 1 cup diced celery
  • 4 garlic cloves, minced
  • ½ teaspoon dried oregano
  • 1 pound petite gold potatoes, quartered
  • 4 to 5 cups chicken stock
  • 2 tablespoons unsalted butter
  • 3 tablespoons flour
  • 1 cup milk
  • 16 ounces freshly grated sharp cheddar cheese
  • ½ cup sour cream
  • Freshly chopped chives, for serving

Instructions

  1. Heat 1 tablespoon of olive oil in a large pot over medium heat. Add ground beef, season with salt and pepper, and brown for 6-8 minutes. Remove and set aside.
  2. In the same pot, add the diced onion, grated carrots, and diced celery. Cook for 5-7 minutes until softened. Add minced garlic and oregano, cooking 1 more minute.
  3. Return cooked beef to the pot, add quartered potatoes and chicken stock. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
  4. In a small saucepan, melt butter over medium heat. Stir in flour and cook for 1-2 minutes. Gradually whisk in milk until thickened (about 2-3 minutes).
  5. Remove from heat and stir in cheese until melted. Add cheesy mixture to the soup pot, then mix in sour cream. Adjust seasoning if needed.
  6. Ladle soup into bowls and garnish with chives. Serve and enjoy!

Notes

For best results, use high-quality ingredients. Cheese should be grated just before use for optimal melting.
