Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1 tbsp (12g) baking powder
  • 1 tsp (5g) sugar
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) garlic powder
  • 1/2 cup (115g) cold unsalted butter, cubed
  • 1 cup (120g) shredded sharp cheddar cheese
  • 1/2 cup (75g) diced cooked ham
  • 1/4 cup (25g) chopped green onions
  • 3/4 cup (180ml) cold buttermilk
  • 1 tbsp (15ml) melted butter (for brushing)
  • Optional: 1/4 tsp smoked paprika for topping

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, sugar, salt, and garlic powder.
  3. Cut in cold butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  4. Stir in cheddar cheese, ham, and green onions until evenly distributed.
  5. Gradually add buttermilk, stirring just until dough comes together (don’t overmix).
  6. Turn dough onto floured surface and gently pat into a 1-inch thick rectangle.
  7. Cut into 12 squares or use a biscuit cutter for rounds.
  8. Place on prepared baking sheet, brush tops with melted butter, and sprinkle with smoked paprika if using.
  9. Bake for 12-15 minutes until golden brown.
  10. Serve warm with extra butter if desired.

Notes

  • For flakier biscuits: Keep all ingredients cold and handle dough minimally.
  • Make ahead: Freeze unbaked biscuits on tray, then transfer to bag. Bake from frozen adding 2-3 extra minutes.
  • Substitutions: Use bacon instead of ham, or swap green onions for chives.
  • Storage: Best eaten day-of, but can be reheated in 350°F oven for 5 minutes.
