Description

A comforting seafood pot pie topped with buttery Cheddar Bay biscuits, combining fresh seafood, tender vegetables, and rich gravy for a cozy meal.


Ingredients

  • 1 lb shrimp (peeled and deveined)
  • 12 oz langostino tails or lobster (fresh or frozen)
  • 8 oz jumbo lump crabmeat (cooked)
  • 1 cup onions (chopped)
  • 1/2 cup bell pepper (chopped)
  • 1/4 cup celery (chopped)
  • 1 tsp salt (plus more to taste)
  • 1 tsp pepper (plus more to taste)
  • Olive oil (for cooking)
  • 2 cups chicken broth (homemade or low-sodium)
  • 1 cup heavy cream
  • 4 tbsp butter (room temperature)
  • 5 tbsp flour
  • 1 tbsp garlic (minced or paste)
  • 1 tsp thyme
  • 1 tsp tarragon (dried)
  • 1/2 tsp smoked paprika
  • 1 box Red Lobster Cheddar Bay Biscuit mix (11.36 oz)
  • 3/4 cup milk
  • 1/2 cup mild cheddar cheese (shredded)
  • 1/4 cup butter (melted)
  • 1 pouch garlic herb seasoning (from the box)

Instructions

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the onions, bell pepper, and celery, and sauté for about 5-7 minutes until softened.
  2. Stir in shrimp, langostino, and crab meat, cooking for an additional 3 minutes until the shrimp is pink. Season with salt and pepper.
  3. Sprinkle flour over the seafood mixture and stir to coat. Gradually whisk in chicken broth and heavy cream, cooking until thickened (about 3-5 minutes). Add garlic, thyme, tarragon, and smoked paprika and remove from heat.
  4. In a separate bowl, mix melted butter and garlic herb seasoning. Brush this mixture on the biscuit batter.
  5. Preheat the oven to 400°F (200°C). Pour the seafood filling into a greased baking dish and drop the biscuit batter over the top, leaving space for rising.
  6. Brush the herb butter sauce over the biscuit batter. Bake for about 25-30 minutes until biscuits are golden brown and filling is bubbling.

Notes

Use fresh or frozen seafood interchangeably. Feel free to customize the seafood and vegetable choices.
