- 4 Bell Peppers
- 200g Feta Cheese, crumbled
- 2 tbsp Olive Oil, plus more for grilling
- 1 Lemon, juiced
- 1 tsp Dried Oregano
- Salt and Pepper to taste
- 1 Cucumber, grated
- 200g Greek Yogurt
- 1 clove Garlic, minced
Instructions
- Preheat your grill or a grill pan over medium-high heat until it’s hot.
- Brush the bell peppers generously with olive oil, and place them directly on the grill. Grill until they soften and develop char marks—about 8-10 minutes.
- Combine crumbled feta, a drizzle of olive oil, freshly squeezed lemon juice, dried oregano, salt, and pepper in a mixing bowl. Stir well and let that marinate for at least 10 minutes.
- Grate the cucumber finely, then squeeze out excess moisture. In another bowl, mix the drained cucumber with Greek yogurt, minced garlic, lemon juice, salt, and pepper. Whisk to your desired consistency.
- Arrange the charred peppers on a plate, top with marinated feta, and serve with tzatziki.
Notes
For a delightful presentation, drizzle olive oil over the top and garnish with oregano or parsley. Perfect with white wine.
