Ingredients

  • 34 Chiles (e.g., ancho, guajillo)
  • 4 cloves Garlic
  • Juice from 2 Limes
  • 1 tsp Cumin
  • Salt and pepper (to taste)
  • 1012 Corn tortillas
  • 46 small Tomatillos
  • 1 medium Onion
  • 1 bunch Cilantro
  • 2 tbsp Olive oil

Instructions

  1. Marinate the chicken: In a blender, combine chiles, garlic, lime juice, cumin, salt, and pepper. Blend until smooth, coat the chicken, and marinate in the fridge for at least 1 hour.
  2. Prepare the grill: Preheat the grill to medium-high heat (about 400°F) with clean grates.
  3. Grill the chicken: Grill the chicken for 6-8 minutes on each side until the internal temperature reaches 165°F.
  4. Make the tomatillo salsa: Roast tomatillos, onion, and cilantro on the grill until charred (about 5-7 minutes), then blend with a pinch of salt.
  5. Warm the tortillas: Grill corn tortillas until warm and pliable (about 30 seconds per side).
  6. Assemble the tacos: Slice grilled chicken, place on tortillas, top with tomatillo salsa, and add any additional toppings.
