- 1 teaspoon chai spice mix
- 1/2 cup unsalted butter, softened
- 1/2 cup maple syrup
- 1/2 cup brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- Topping: 1/4 cup sugar mixed with 1 teaspoon chai spice mix
Instructions
- Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together the flour, baking soda, baking powder, salt, and chai spice mix. Set aside.
- Cream together the softened butter, maple syrup, and brown sugar until smooth and fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract until fully combined.
- Gradually mix in the dry ingredients until just combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Sprinkle the chai spice sugar on top of each cookie.
- Bake for 10-12 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
For thicker cookies, chill the dough for 30 minutes before baking. Store in an airtight container for up to a week or freeze for up to three months.
