Description

Deliciously nutritious cereal protein bars made with wholesome ingredients like almond butter and dark chocolate chips, perfect for a snack or breakfast.


Ingredients

Scale
  • 1/2 cup almond butter (no sugar, no salt)
  • 1/4 cup coconut butter, melted
  • 1/4 cup vanilla protein powder
  • 3 cups unsweetened paleo cereal
  • 1 cup dark chocolate chips
  • 1/4 cup almond butter (reserved to mix with the chocolate)

Instructions

  1. Begin by lining an 11×7 inch or 8×8 inch baking dish with foil or parchment paper.
  2. In a large mixing bowl, combine the almond butter, coconut butter, and protein powder.
  3. Gradually mix in the cereal until everything is coated.
  4. Firmly press the cereal base into your lined pan.
  5. Pop the pan in the freezer for about 15 minutes to set.
  6. Melt the dark chocolate in the microwave or on the stovetop.
  7. Once the chocolate is melted, mix in the reserved almond butter.
  8. Pour the chocolate mixture over the cereal base.
  9. Place the bars in the fridge and chill overnight or for at least 2 hours.
  10. Cut into desired size and shape, and store in an airtight container.

Notes

For easy cutting, run your knife under hot water before slicing. Avoid overheating your chocolate.
