- 1/2 cup almond butter (no sugar, no salt)
- 1/4 cup coconut butter, melted
- 1/4 cup vanilla protein powder
- 3 cups unsweetened paleo cereal
- 1 cup dark chocolate chips
- 1/4 cup almond butter (reserved to mix with the chocolate)
Instructions
- Begin by lining an 11×7 inch or 8×8 inch baking dish with foil or parchment paper.
- In a large mixing bowl, combine the almond butter, coconut butter, and protein powder.
- Gradually mix in the cereal until everything is coated.
- Firmly press the cereal base into your lined pan.
- Pop the pan in the freezer for about 15 minutes to set.
- Melt the dark chocolate in the microwave or on the stovetop.
- Once the chocolate is melted, mix in the reserved almond butter.
- Pour the chocolate mixture over the cereal base.
- Place the bars in the fridge and chill overnight or for at least 2 hours.
- Cut into desired size and shape, and store in an airtight container.
Notes
For easy cutting, run your knife under hot water before slicing. Avoid overheating your chocolate.
