Description

A vibrant and spicy Middle Eastern sauce made with fresh herbs, garlic, and chili peppers, perfect for drizzling on meats, grains, or as a dip.


Ingredients

  • 1 cup fresh cilantro
  • 1 cup fresh parsley
  • 34 cloves garlic, peeled
  • 12 green chili peppers
  • 1 teaspoon ground cumin
  • ½ cup olive oil (extra virgin recommended)
  • 2 tablespoons fresh lemon juice
  • Salt to taste

Instructions

  1. Rinse your fresh herbs thoroughly and pat them dry. Peel the garlic cloves and chop the green chili peppers (remove seeds for less heat).
  2. In a blender, combine the fresh herbs, garlic, and chili peppers. Pulse until finely chopped—about 15-20 seconds.
  3. Add the cumin, olive oil, lemon juice, and salt. Blend until smooth—this should take about 30-60 seconds.
  4. Taste and adjust seasoning as needed.
  5. Spoon the sauce into a small bowl and serve as a condiment or dip.

Notes

Store in an airtight container in the refrigerator for up to 7 days. Can also be frozen for up to 3 months.
