- 1 cup packed, finely grated carrots
- 1/2 cup ricotta cheese
- 1 large egg
- 2 tablespoons wholemeal self-raising flour
- 1/4 teaspoon garlic powder
- 1 teaspoon dried thyme
Instructions
- Prepare the carrots by finely grating 1 cup of them. In a large mixing bowl, combine the grated carrots with 1/2 cup of ricotta cheese, 1 large egg, and 2 tablespoons of wholemeal self-raising flour.
- Mix the ingredients using a silicone spatula or spoon until well combined. The batter should be somewhat thick but pliable.
- Heat a non-stick skillet over medium heat and lightly spray with oil for non-stick purposes.
- Form fritters by scooping out portions of the batter with a tablespoon and gently placing them onto the skillet, flattening each slightly.
- Cook for about 1 to 2 minutes on each side until golden brown. Remove from skillet and place on paper towels to absorb excess oil.
- Serve warm with your favorite dip.
Notes
For added flavor, consider a pinch of black pepper or some freshly chopped parsley. Store in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months.
