Description

Delicious and wholesome carrot fritters packed with ricotta, perfect for a quick snack or light meal.


Ingredients

  • 1 cup packed, finely grated carrots
  • 1/2 cup ricotta cheese
  • 1 large egg
  • 2 tablespoons wholemeal self-raising flour
  • 1/4 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Prepare the carrots by finely grating 1 cup of them. In a large mixing bowl, combine the grated carrots with 1/2 cup of ricotta cheese, 1 large egg, and 2 tablespoons of wholemeal self-raising flour.
  2. Mix the ingredients using a silicone spatula or spoon until well combined. The batter should be somewhat thick but pliable.
  3. Heat a non-stick skillet over medium heat and lightly spray with oil for non-stick purposes.
  4. Form fritters by scooping out portions of the batter with a tablespoon and gently placing them onto the skillet, flattening each slightly.
  5. Cook for about 1 to 2 minutes on each side until golden brown. Remove from skillet and place on paper towels to absorb excess oil.
  6. Serve warm with your favorite dip.

Notes

For added flavor, consider a pinch of black pepper or some freshly chopped parsley. Store in an airtight container in the fridge for up to 3 days, or freeze for up to 2 months.
