Description

Indulge in warm, spiced Carrot Cake Scones featuring tender grated carrots and crunchy walnuts, perfect for a cozy treat.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup grated carrots
  • 1/4 cup chopped walnuts or pecans (optional)
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and spices until well combined.
  3. Cut in the cold cubed butter until the mixture resembles coarse crumbs.
  4. Stir in the grated carrots and walnuts, if using.
  5. In a separate bowl, whisk together the buttermilk, egg, and vanilla extract until fully incorporated.
  6. Add the wet ingredients to the dry mixture and mix until just combined.
  7. Turn the dough onto a floured surface and shape it into a circle about 1 inch thick.
  8. Cut into wedges and place them on a baking sheet lined with parchment paper.
  9. Bake for 15-20 minutes or until the scones turn a lovely golden brown.
  10. While the scones cool, prepare the cream cheese filling by combining the softened cream cheese and powdered sugar until smooth.
  11. Once cooled, slice the scones in half and fill them with the cream cheese mixture.
  12. Serve warm and enjoy!
