- 4 cups ripe apricots, pitted and chopped
- 1 cup water
- ¾ cup sugar (or substitute with honey)
- 1–2 teaspoons ground cardamom
- 1 tablespoon lemon juice
Instructions
- Prepare the apricots: In a medium saucepan, combine chopped apricots and water. Bring to a simmer over medium heat, stirring occasionally until the apricots soften (about 10 minutes).
- Sweeten & spice: Add the sugar and stir until dissolved. Sprinkle in the cardamom and add lemon juice, whisking until fully combined.
- Blend: Use an immersion blender or transfer the mixture to a high-speed blender. Blend until smooth and silky, enhancing the vibrant color and flavor profile.
- Chill: Allow the mixture to cool, then cover and refrigerate for at least 2 hours to allow flavors to meld.
- Churn: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Freeze: Transfer the sorbet to an airtight container and freeze for at least 4 hours for firm consistency.
- Serve: Before serving, leave the sorbet at room temperature for a few minutes to soften slightly for the perfect scoop.
Notes
For maximum flavor, use ripe, seasonal apricots and freshly ground cardamom. This sorbet is naturally vegan, gluten-free, and can cater to keto diets by using low-carb sweeteners.
