- 2 tablespoons olive oil
- 2 pounds yellow onions, sliced into thin half-moons
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup packed dark brown sugar
- 1/4 cup balsamic vinegar
- 2 tablespoons apple cider vinegar
- 1 teaspoon fresh thyme leaves (optional)
- 1/4 teaspoon crushed red pepper flakes (optional)
Instructions
- Prep the onions by peeling and slicing them into thin half-moon strips about 1/8 inch thick.
- Heat the olive oil in a large skillet or Dutch oven over medium-low heat.
- Add the sliced onions and salt, and cook for 30 to 40 minutes, stirring frequently until the onions turn golden brown.
- Sprinkle in the brown sugar and pour in both the balsamic and apple cider vinegars, stirring to combine.
- Add black pepper, thyme leaves, and crushed red pepper flakes, and continue to cook for an additional 15 to 20 minutes until the jam thickens.
- Remove from heat, let it cool slightly, then spoon into clean jars or containers.
- Refrigerate for up to 2 weeks or freeze for longer storage.
