Instructions
- Preheat the oven to 400°F (200°C).
- Whisk together the flour, baking powder, and salt until evenly combined.
- Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
- Stir in Gruyere cheese, caramelized onions, and fresh sage, ensuring an even distribution.
- Add heavy cream and mix gently until everything is just combined—do not overwork the dough.
- Turn the dough onto a floured surface and knead gently a few times until smooth.
- Pat the dough into a 1-inch thick circle and cut into wedges or rounds.
- Place the scones on a baking sheet lined with parchment paper.

Notes
