- 1/2 cup (100g) granulated sugar
- 1 tsp vanilla extract
- 2 cups (250g) all-purpose flour
- 1/4 tsp salt
- 25 soft caramels
- 2 tbsp heavy cream
- 1 cup (175g) milk chocolate chips or chopped milk chocolate
- 1 tsp vegetable oil or coconut oil
Instructions
- Prepare Your Ingredients: Ensure butter is at room temperature and preheat your oven to 350°F (175°C).
- Cream Butter and Sugar: In a large bowl, cream butter and sugar together until light and fluffy (2-3 minutes).
- Add Vanilla: Mix in the vanilla extract until fully incorporated.
- Combine Dry Ingredients: Gradually add the flour and salt, mixing on low speed until just combined.
- Shape and Bake: Scoop tablespoon-sized portions of dough, roll into balls, and press indents in the center. Bake for 12-14 minutes until edges are lightly golden.
- Prepare the Caramel: Melt caramels with heavy cream over low heat until smooth.
- Fill and Decorate: Spoon melted caramel into the indents of each cooled cookie.
- Melt the Chocolate: Melt chocolate chips and oil until smooth. Spoon over the caramel on each cookie.
- Set and Serve: Let cookies rest until chocolate is set before serving.
Notes
Store in an airtight container for up to a week or in the fridge for up to two weeks. Can be frozen for up to three months.
