Description

Deliciously chewy cookies filled with rich caramel and topped with decadent chocolate, perfect for any occasion.


Ingredients

  • 1 cup (226g) unsalted butter, room temperature
  • 1/2 cup (100g) granulated sugar
  • 1 tsp vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1/4 tsp salt
  • 25 soft caramels
  • 2 tbsp heavy cream
  • 1 cup (175g) milk chocolate chips or chopped milk chocolate
  • 1 tsp vegetable oil or coconut oil

Instructions

  1. Prepare Your Ingredients: Ensure butter is at room temperature and preheat your oven to 350°F (175°C).
  2. Cream Butter and Sugar: In a large bowl, cream butter and sugar together until light and fluffy (2-3 minutes).
  3. Add Vanilla: Mix in the vanilla extract until fully incorporated.
  4. Combine Dry Ingredients: Gradually add the flour and salt, mixing on low speed until just combined.
  5. Shape and Bake: Scoop tablespoon-sized portions of dough, roll into balls, and press indents in the center. Bake for 12-14 minutes until edges are lightly golden.
  6. Prepare the Caramel: Melt caramels with heavy cream over low heat until smooth.
  7. Fill and Decorate: Spoon melted caramel into the indents of each cooled cookie.
  8. Melt the Chocolate: Melt chocolate chips and oil until smooth. Spoon over the caramel on each cookie.
  9. Set and Serve: Let cookies rest until chocolate is set before serving.

Store in an airtight container for up to a week or in the fridge for up to two weeks. Can be frozen for up to three months.
