Description

A moist and fluffy cake infused with tart Granny Smith apples and luscious caramel, perfect for any cozy gathering.


Ingredients

  • 1 cup (2 sticks / 227 g) unsalted butter, melted
  • 1 3/4 cups (350 g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 1 large egg yolk, room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups (285 g) all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon apple pie spice
  • 2 medium Granny Smith apples, peeled, cored, and diced (about 2 1/4 cups)
  • Caramel sauce, for topping

Instructions

  1. Preheat the oven to 350°F (175°C). Spray an 8×8-inch baking dish with nonstick cooking spray and set aside.
  2. Mix the melted butter and brown sugar together until fully combined and creamy, about 2-3 minutes.
  3. Add the eggs and egg yolk, one at a time, mixing well after each addition. Then, mix in the vanilla extract.
  4. Combine the flour, cornstarch, baking powder, salt, and apple pie spice in a separate bowl until well mixed.
  5. Incorporate the dry mixture into the wet mixture gradually, mixing until just incorporated.
  6. Fold in the diced Granny Smith apples until evenly distributed.
  7. Spread the batter into the prepared baking dish, smoothing the top. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool the cake completely in the pan before drizzling with caramel sauce.

Notes

Store in an airtight container at room temperature for up to 2 days or refrigerated for up to a week. Great for make-ahead, just cool and store tightly.
