- 1 cup (2 sticks / 227 g) unsalted butter, melted
- 1 3/4 cups (350 g) light brown sugar, packed
- 2 large eggs, room temperature
- 1 large egg yolk, room temperature
- 1 teaspoon vanilla extract
- 2 1/2 cups (285 g) all-purpose flour
- 2 teaspoons cornstarch
- 1 teaspoon baking powder
- 1 teaspoon kosher salt
- 1/2 teaspoon apple pie spice
- 2 medium Granny Smith apples, peeled, cored, and diced (about 2 1/4 cups)
- Caramel sauce, for topping
Instructions
- Preheat the oven to 350°F (175°C). Spray an 8×8-inch baking dish with nonstick cooking spray and set aside.
- Mix the melted butter and brown sugar together until fully combined and creamy, about 2-3 minutes.
- Add the eggs and egg yolk, one at a time, mixing well after each addition. Then, mix in the vanilla extract.
- Combine the flour, cornstarch, baking powder, salt, and apple pie spice in a separate bowl until well mixed.
- Incorporate the dry mixture into the wet mixture gradually, mixing until just incorporated.
- Fold in the diced Granny Smith apples until evenly distributed.
- Spread the batter into the prepared baking dish, smoothing the top. Bake for 50-55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool the cake completely in the pan before drizzling with caramel sauce.
Notes
Store in an airtight container at room temperature for up to 2 days or refrigerated for up to a week. Great for make-ahead, just cool and store tightly.
