- 2 large Honeycrisp apples, diced
- 3 tablespoons light brown sugar, lightly packed

- 1/3 cup (67 g) granulated sugar
- 1/3 cup (67 g) light brown sugar, lightly packed
- 1 teaspoon ground cinnamon

- 1 3/4 cups (199.5 g) cake flour
- 1/4 teaspoon baking soda
- 6 tablespoons unsalted butter, cut into 1-inch pieces, at room temperature
- 1/3 cup (82 g) buttermilk, at room temperature
- 1 large egg, at room temperature
- 1 large egg yolk, at room temperature
- 1 teaspoon vanilla extract
- Caramel topping, for drizzling
Instructions
- Preheat your oven to 325°F (163°C). Line an 8×8-inch baking dish with aluminum foil, leaving excess over the edges. Spray with nonstick cooking spray and set aside.
- Prepare the apple filling by melting the butter in a medium saucepan over medium heat. Add the diced apples, light brown sugar, cinnamon, and kosher salt. Cook for 5-8 minutes until the apples soften and release their juices. Set aside to cool slightly.
- Make the crumb mixture by mixing the melted butter, granulated sugar, light brown sugar, cinnamon, and kosher salt in a large bowl. Stir in the flour until just combined.
- Make the cake batter in a stand mixer by combining the cake flour, sugars, cinnamon, salt, and baking soda. Mix on low speed. Add the room temperature butter pieces, mixing until crumbly. Then add the buttermilk, egg, egg yolk, and vanilla extract. Mix until light and fluffy.
- Assemble the cake by pouring the batter into the prepared pan and spreading it evenly. Layer the apple mixture on top of the batter.
- Add the crumb topping by breaking it into large pieces and evenly spreading them over the apple layer.
- Bake for 55-60 minutes until the crumbs are golden and a toothpick inserted into the center comes out clean.
- Cool for 30 minutes in the pan, then lift it out using the foil and cool further on a wire rack. Drizzle generously with caramel topping before slicing and serving.
