  • 1/2 cup brown sugar
  • 3 large eggs

  • 1 cup buttermilk
  • 2 cups diced apples
  • 1 cup caramel sauce
  • 1 cup unsalted butter for frosting
  • 4 cups powdered sugar
  • 1/4 cup caramel sauce for frosting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease three 8-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. Cream the softened butter, granulated sugar, and brown sugar in a large mixing bowl until light and fluffy, about 3 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. Alternately add the dry ingredients and buttermilk to the wet mixture, starting and ending with dry ingredients, mixing until just combined.
  6. Gently fold in the diced apples until evenly distributed.
  7. Divide the batter between the prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  9. Prepare the frosting by beating the softened butter until creamy, then mixing in the powdered sugar and caramel sauce.
  10. Once the cakes are cool, frost between the layers and cover the top and sides of the cake with frosting. Drizzle additional caramel sauce over the top before serving.
