Description

A flavorful twist on the classic Caprese salad, this stuffed chicken breast features juicy chicken filled with fresh tomatoes, mozzarella, and basil.


Ingredients

  • 4 boneless skinless chicken breasts
  • 8 oz fresh mozzarella cheese, sliced
  • 2 medium tomatoes, thinly sliced
  • 8 to 10 fresh basil leaves
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt and 1/2 tsp black pepper to taste
  • Optional: 2 tbsp balsamic glaze for drizzling

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Butterfly the chicken breasts by slicing lengthwise but not all the way through to create a pocket.
  3. Season the chicken with salt, pepper, and Italian seasoning.
  4. Stuff each chicken breast with mozzarella, tomato slices, and basil leaves; secure openings with toothpicks.
  5. In an oven-safe skillet, heat olive oil and sear the chicken for 2 to 3 minutes on each side until golden brown.
  6. Transfer the skillet to the oven and bake for about 20 to 25 minutes until the chicken is cooked through (internal temperature of 165°F).
  7. Remove toothpicks, drizzle with balsamic glaze if desired, and serve hot.

Notes

For added flavor, consider marinating the chicken beforehand or broiling for a crispy finish.
