Description

A fresh and vibrant pasta salad inspired by the classic Caprese salad, featuring juicy tomatoes, creamy mozzarella, and fresh basil tossed with pasta and a simple balsamic vinaigrette.


Ingredients

  • 1 cup pasta
  • 1 lb cherry tomatoes
  • 1 lb fresh mozzarella
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tsp salt
  • 2 tbsp basil

Instructions

  1. Cook the pasta according to package directions in salted water until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.
  2. In a large bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper to make the vinaigrette.
  3. Add the cooled pasta, halved tomatoes, mozzarella pearls, and sliced basil to the bowl with the dressing.
  4. Toss gently until everything is evenly coated. If using, add the capers and toss to combine.
  5. Taste and adjust seasoning with more salt or pepper if needed. For best flavor, let the salad sit for at least 15-20 minutes before serving to allow the flavors to meld.
