Ingredients
- 1 cup pasta
- 1 lb cherry tomatoes
- 1 lb fresh mozzarella
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp salt
- 2 tbsp basil
Instructions
- Cook the pasta according to package directions in salted water until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.
- In a large bowl, whisk together the olive oil, balsamic vinegar, minced garlic, salt, and pepper to make the vinaigrette.
- Add the cooled pasta, halved tomatoes, mozzarella pearls, and sliced basil to the bowl with the dressing.
- Toss gently until everything is evenly coated. If using, add the capers and toss to combine.
- Taste and adjust seasoning with more salt or pepper if needed. For best flavor, let the salad sit for at least 15-20 minutes before serving to allow the flavors to meld.
