- 8 oz spaghetti
- 1 lb boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 2 tablespoons butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup mozzarella cheese, shredded
- ½ cup parmesan cheese, grated
- 2 tablespoons olive oil
- Salt & pepper to taste
- Fresh parsley for garnish
Instructions
- Bring a large pot of salted water to a boil. Add spaghetti and cook until al dente, about 8-10 minutes. Reserve about 1 cup of pasta water before draining.
- In a skillet, heat olive oil over medium-high heat. Season chicken with Cajun seasoning, salt, and pepper. Cook for 5-7 minutes per side until cooked through. Remove and let rest before slicing.
- In the same skillet, melt butter over medium heat. Add garlic and sauté for 1-2 minutes. Pour in heavy cream and stir. Gradually add mozzarella and parmesan, stirring until melted.
- Toss drained spaghetti into the sauce. Slice chicken and nestle on top before serving.
- Garnish with fresh parsley and additional cheese if desired.
Notes
Use fresh ingredients for the best flavor. Store leftovers in an airtight container in the fridge for up to 3 days.
