- 1 tbsp olive oil
- ½ tbsp butter, room temperature
- 1 large onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp chopped sun-dried tomatoes
- 1 tbsp tomato paste
- 1 cup (200g) orzo pasta
- 1 cup (240ml) chicken broth

- ¼ cup (60ml) heavy cream
- 3 tbsp grated Parmesan cheese
Instructions
- Toss the chicken strips with Cajun seasoning and salt until evenly coated.
- Heat olive oil and butter in a large pan over medium heat until the butter starts to foam.
- Add the chicken and cook for 6-8 minutes, stirring occasionally, until browned and cooked through.
- Stir in onion, garlic, sun-dried tomatoes, and tomato paste; cook on low heat for 5 minutes.
- Add orzo and stir for about a minute to toast it lightly.
- Pour in chicken broth, bring to a simmer, cover and cook for 20 minutes, stirring occasionally.
- Once orzo is al dente, stir in spinach and cook until wilted, about 1-2 minutes.

Notes
Room temperature butter makes mixing easier. For extra creaminess, add more heavy cream or Parmesan before serving.
