- 2 tablespoons olive oil
- 2 tablespoons Cajun seasoning
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 12 oz fettuccine pasta
- 3 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1½ cups heavy cream
- 1 cup freshly grated Parmesan cheese
- Salt & freshly cracked black pepper, to taste
- ½ cup diced tomatoes or bell peppers (optional)
- Fresh parsley (optional, for garnish)
Instructions
- Boil salted water and cook the fettuccine until al dente (approx. 9–11 minutes) and reserve ½ cup of pasta water before draining.
- Toss the chicken pieces in 2 tablespoons of Cajun seasoning until evenly coated.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Cook the chicken for 4–5 minutes until browned and cooked through.
- In the same skillet, melt 3 tablespoons of unsalted butter and add 4 cloves of minced garlic, sauté for about 30 seconds until fragrant.
- Pour in 1½ cups of heavy cream and bring to a gentle simmer.
- Slowly whisk in 1 cup of freshly grated Parmesan cheese until smooth and thick, seasoning with salt and pepper.
- Return the chicken to the skillet, add the drained fettuccine, and toss to coat everything.
- Optional: Stir in ½ cup of diced tomatoes or bell peppers and garnish with fresh parsley before serving hot!
Notes
For a vegetarian option, substitute chicken with sautéed vegetables. Adjust the spice level by varying the amount of Cajun seasoning used.
