Description

A comforting twist on a classic, this dish combines zesty Cajun spices with rich Alfredo sauce for a delightful meal.


Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons Cajun seasoning
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 12 oz fettuccine pasta
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1½ cups heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Salt & freshly cracked black pepper, to taste
  • ½ cup diced tomatoes or bell peppers (optional)
  • Fresh parsley (optional, for garnish)

Instructions

  1. Boil salted water and cook the fettuccine until al dente (approx. 9–11 minutes) and reserve ½ cup of pasta water before draining.
  2. Toss the chicken pieces in 2 tablespoons of Cajun seasoning until evenly coated.
  3. Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Cook the chicken for 4–5 minutes until browned and cooked through.
  4. In the same skillet, melt 3 tablespoons of unsalted butter and add 4 cloves of minced garlic, sauté for about 30 seconds until fragrant.
  5. Pour in 1½ cups of heavy cream and bring to a gentle simmer.
  6. Slowly whisk in 1 cup of freshly grated Parmesan cheese until smooth and thick, seasoning with salt and pepper.
  7. Return the chicken to the skillet, add the drained fettuccine, and toss to coat everything.
  8. Optional: Stir in ½ cup of diced tomatoes or bell peppers and garnish with fresh parsley before serving hot!

Notes

For a vegetarian option, substitute chicken with sautéed vegetables. Adjust the spice level by varying the amount of Cajun seasoning used.
