Description

A hearty and flavorful Cajun Black-Eyed Pea Stew with smoky sausage, perfect for chilly evenings and family gatherings.


Ingredients

  • 1 lb black-eyed peas (dry, soaked overnight)
  • 1 lb smoked sausage (like Andouille or kielbasa)
  • 1 medium onion, diced
  • 2 stalks celery, chopped
  • 1 bell pepper, diced (green or red)
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 tsp Cajun seasoning
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons olive oil (or vegetable oil)

Instructions

  1. Soak your black-eyed peas in water overnight.
  2. In a large pot or Dutch oven, heat the olive oil over medium heat.
  3. Add the diced onions, celery, and bell pepper. Sauté until softened, about 5-7 minutes.
  4. Add the minced garlic and sauté for another minute until fragrant.
  5. Chop the sausage into bite-sized pieces and add them to the pot. Cook until browned, about 5-6 minutes.
  6. Add the soaked and drained black-eyed peas, chicken broth, Cajun seasoning, and bay leaf to the pot. Bring to a boil.
  7. Reduce the heat to low, cover, and let it simmer for 45-60 minutes.
  8. Remove the bay leaf, then season with salt and pepper to taste.

Notes

This stew can be made ahead of time and tastes even better the next day. It freezes well for up to 3 months.
