- 12 oz. rotini pasta
- 1 lb. ground beef
- 1 medium onion, chopped
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp Cajun seasoning
- 1 cup shredded cheddar cheese
- Salt & pepper, to taste
- 2 tbsp olive oil (for sautéing)
- Chopped green onions (for garnish)
Instructions
- In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package directions until al dente (about 8-10 minutes). Drain the pasta and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped onion and diced bell pepper. Sauté for 3-4 minutes until softened.
- Add the ground beef to the skillet, breaking it apart. Cook until browned, about 5-7 minutes.
- Stir in minced garlic and cook for another minute. Add Cajun seasoning, diced tomatoes, and chicken broth. Let it simmer for 5 minutes.
- Stir in the cooked rotini, ensuring it absorbs the sauce. Add a splash of reserved pasta water if needed.
- Sprinkle shredded cheddar cheese on top and mix gently until melted.
- Before serving, taste for seasoning and adjust as necessary. Garnish with chopped green onions.
Notes
Make sure all ingredients are prepped before cooking. This dish can be made a day in advance and stored in the refrigerator.
