Description

A flavorful pasta dish combining Cajun spices with ground beef and rotini for a comforting meal.


Ingredients

  • 12 oz. rotini pasta
  • 1 lb. ground beef
  • 1 medium onion, chopped
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 tbsp Cajun seasoning
  • 1 cup shredded cheddar cheese
  • Salt & pepper, to taste
  • 2 tbsp olive oil (for sautéing)
  • Chopped green onions (for garnish)

Instructions

  1. In a large pot, bring salted water to a boil. Add the rotini pasta and cook according to package directions until al dente (about 8-10 minutes). Drain the pasta and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and diced bell pepper. Sauté for 3-4 minutes until softened.
  3. Add the ground beef to the skillet, breaking it apart. Cook until browned, about 5-7 minutes.
  4. Stir in minced garlic and cook for another minute. Add Cajun seasoning, diced tomatoes, and chicken broth. Let it simmer for 5 minutes.
  5. Stir in the cooked rotini, ensuring it absorbs the sauce. Add a splash of reserved pasta water if needed.
  6. Sprinkle shredded cheddar cheese on top and mix gently until melted.
  7. Before serving, taste for seasoning and adjust as necessary. Garnish with chopped green onions.

Notes

Make sure all ingredients are prepped before cooking. This dish can be made a day in advance and stored in the refrigerator.
