Description

A vibrant and satisfying stir fry featuring crunchy cabbage, hearty tofu, and a tangy, zesty spicy tahini sauce.


Ingredients

  • 14 oz firm tofu, cubed
  • 2 oz uncooked macaroni pasta
  • 1 1/2 tablespoons sesame oil
  • 1 small cabbage, thinly sliced
  • 2 carrots, shredded
  • 1 red capsicum (bell pepper), thinly sliced
  • 4 spring onions (scallions), sliced
  • Sesame seeds, to garnish
  • 1/4 cup tahini or peanut butter
  • 34 tablespoons tamari soy sauce
  • 1 tablespoon maple syrup
  • 1 1/2 tablespoons mild curry powder
  • 1/2 teaspoon ginger powder
  • 2 tablespoons fresh lemon juice or lime juice
  • 1/2 cup water

Instructions

  1. Start by cooking the pasta according to package directions. Once it’s al dente, drain and set aside.
  2. Take your firm tofu and cube it into 1/2 inch pieces. In a wok or large non-stick pan, heat 1 tablespoon of sesame oil over medium heat.
  3. Add tofu cubes and cook for about 6-7 minutes on each side, allowing them to turn slightly golden and crispy. Once cooked, remove and set aside.
  4. In a bowl, mix together tahini, tamari soy sauce, maple syrup, curry powder, ginger powder, lemon juice, and water. Adjust the sauce tastes to your liking.
  5. Add the remaining 1/2 tablespoon of sesame oil to the pan over medium-high temperature.
  6. Add sliced cabbage, shredded carrots, capsicum, and spring onions, and stir fry for 5-6 minutes.
  7. Add your crispy tofu and drained pasta to the pan, then pour over your creamy tahini sauce. Toss everything together well.
  8. Serve immediately and sprinkle sesame seeds for that finishing touch.

Notes

Ensure your tofu is pressed to rid it of excess moisture for the best texture. Best stored in an airtight container in the fridge for up to 3 days.
