- 1 1/2 cups all-purpose flour
- 2 cups old-fashioned oats
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 cup unsalted butter, room temperature
- 1 cup light brown sugar, packed
- 2 large eggs, room temperature
- 1 tablespoon molasses
- 1 teaspoon vanilla extract
- 2 cups butterscotch chips, divided
- Butterscotch sauce (for topping, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare a 9×13-inch baking dish with baking spray or parchment paper.
- Mix the flour, oats, baking soda, baking powder, and kosher salt in a large bowl.
- Cream the butter and brown sugar together until smooth and creamy.
- Add the eggs one at a time, mixing until combined, then beat in the molasses and vanilla extract.
- Combine the dry mixture with the wet ingredients until just combined.
- Fold in 1 1/2 cups of butterscotch chips.
- Transfer the dough to the prepared baking dish, packing it down evenly, and top with remaining chips.
- Bake for 25-30 minutes, until edges are golden brown and a toothpick comes out clean.
- Cool for 15 minutes, then drizzle with butterscotch sauce if desired, cut into squares and serve.
Notes
For best results, make sure your butter and eggs are at room temperature. Can be customized with nuts or dried fruit.
