Description

A vibrant and refreshing Butterfly Pea Tea Lemonade that changes color with lemon juice, perfect for summer gatherings.


Ingredients

  • 3 cups warm filtered water
  • 1/3 cup granulated sugar (adjust to taste)
  • 1/2 cup dried butterfly pea flowers (or fresh)
  • 1/3 cup fresh lemon juice
  • 3 cups ice (crushed or cubed)
  • 3 cups soda water
  • Garnishes (optional): lemon slices and sprigs of rosemary

Instructions

  1. Prepare the Butterfly Pea Tea: Pour the warm water into a heatproof cup or pitcher, add the butterfly pea flowers, and stir gently. Let them steep for about 5-7 minutes until the color is vibrant and deep blue.
  2. Strain the Tea: Using a fine mesh strainer, strain the butterfly pea tea into a larger pitcher, discarding the flowers.
  3. Sweeten the Tea: While the tea is still warm, add the granulated sugar to the strained tea and stir gently until the sugar is completely dissolved.
  4. Mix in Lemon Juice: Add the fresh lemon juice to the sweetened tea and stir to combine.
  5. Serve it Up: Fill glasses with ice cubes, then pour the butterfly pea lemonade over the ice and top off with soda water.
  6. Enjoy Immediately: Sip and savor, garnishing with lemon slices and rosemary if desired.
