- 1/3 cup granulated sugar (adjust to taste)
- 1/2 cup dried butterfly pea flowers (or fresh)
- 1/3 cup fresh lemon juice
- 3 cups ice (crushed or cubed)
- 3 cups soda water
- Garnishes (optional): lemon slices and sprigs of rosemary
Instructions
- Prepare the Butterfly Pea Tea: Pour the warm water into a heatproof cup or pitcher, add the butterfly pea flowers, and stir gently. Let them steep for about 5-7 minutes until the color is vibrant and deep blue.
- Strain the Tea: Using a fine mesh strainer, strain the butterfly pea tea into a larger pitcher, discarding the flowers.
- Sweeten the Tea: While the tea is still warm, add the granulated sugar to the strained tea and stir gently until the sugar is completely dissolved.
- Mix in Lemon Juice: Add the fresh lemon juice to the sweetened tea and stir to combine.
- Serve it Up: Fill glasses with ice cubes, then pour the butterfly pea lemonade over the ice and top off with soda water.
- Enjoy Immediately: Sip and savor, garnishing with lemon slices and rosemary if desired.
Notes
For best results, serve immediately after mixing to retain fizz. Store leftovers in the fridge for up to 3 days.
