These Butter Pecan Cookies are delightfully chewy and crunchy, enriched with the rich flavors of toffee and toasted pecans.

- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup toasted pecans, chopped
- 1 cup toffee bits
- Optional: 1/2 cup chocolate chips, coconut, butterscotch chips, or oatmeal
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy, about 2-3 minutes.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking soda, and salt. Gradually mix into the wet ingredients until just combined.
- Fold in the toasted pecans and toffee bits until evenly distributed.
- Drop tablespoonfuls of dough onto ungreased baking sheets, spaced about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown.
- Let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. They freeze well too.
