Description

These Butter Pecan Cookies are delightfully chewy and crunchy, enriched with the rich flavors of toffee and toasted pecans.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup toasted pecans, chopped
  • 1 cup toffee bits
  • Optional: 1/2 cup chocolate chips, coconut, butterscotch chips, or oatmeal

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, and salt. Gradually mix into the wet ingredients until just combined.
  5. Fold in the toasted pecans and toffee bits until evenly distributed.
  6. Drop tablespoonfuls of dough onto ungreased baking sheets, spaced about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.

Store cookies in an airtight container at room temperature for up to a week. They freeze well too.
