Description

These Buffalo Chicken Egg Rolls are a flavorful fusion of spicy, cheesy, and savory tastes, combining shredded rotisserie chicken with buffalo sauce and wrapped in a crunchy shell.


Ingredients

  • 1 cup rotisserie chicken, shredded
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup buffalo sauce
  • 1 tablespoon ranch seasoning
  • Egg roll wrappers
  • Cooking spray or oil for frying

Instructions

  1. In a bowl, combine your shredded chicken, cheddar cheese, mozzarella, buffalo sauce, and ranch seasoning. Mix until everything is nicely blended.
  2. Lay an egg roll wrapper on a clean, dry surface with a corner positioned toward you.
  3. Place a spoonful of the buffalo chicken filling in the center. Seal it tightly.
  4. Fold the bottom corner over the filling, then fold in the sides and roll tightly, sealing edges with a dab of water.
  5. Repeat until you’ve used all the wrappers and filling.
  6. If using an air fryer, spray the egg rolls generously and cook at 375°F (190°C) for 10-12 minutes. For frying, heat oil in a pan and fry each egg roll for about 3-4 minutes per side. For baking, preheat to 400°F (200°C) and bake for 15-20 minutes, flipping halfway.

Notes

Avoid overcrowding the frying pan to prevent soggy egg rolls. Store leftovers in an airtight container in the fridge for up to 3 days.
