- 1 cup rotisserie chicken, shredded
- 1/2 cup cheddar cheese, shredded
- 1/2 cup mozzarella cheese, shredded
- 1/4 cup buffalo sauce
- 1 tablespoon ranch seasoning
- Egg roll wrappers
- Cooking spray or oil for frying
Instructions
- In a bowl, combine your shredded chicken, cheddar cheese, mozzarella, buffalo sauce, and ranch seasoning. Mix until everything is nicely blended.
- Lay an egg roll wrapper on a clean, dry surface with a corner positioned toward you.
- Place a spoonful of the buffalo chicken filling in the center. Seal it tightly.
- Fold the bottom corner over the filling, then fold in the sides and roll tightly, sealing edges with a dab of water.
- Repeat until you’ve used all the wrappers and filling.
- If using an air fryer, spray the egg rolls generously and cook at 375°F (190°C) for 10-12 minutes. For frying, heat oil in a pan and fry each egg roll for about 3-4 minutes per side. For baking, preheat to 400°F (200°C) and bake for 15-20 minutes, flipping halfway.
Notes
Avoid overcrowding the frying pan to prevent soggy egg rolls. Store leftovers in an airtight container in the fridge for up to 3 days.
