Description
A savory, comforting pasta dish featuring caramelized Brussels sprouts, garlic, and Parmesan cheese tossed with al dente pasta. The sprouts develop a delicious nutty flavor when roasted, pairing perfectly with the rich, cheesy sauce.
Ingredients
- 8 oz spaghetti or linguine
- 2 tbsp olive oil
- 1 tbsp butter
- 3 cups Brussels sprouts, trimmed and thinly sliced
- 3 garlic cloves, minced
- 1/4 tsp red pepper flakes (optional)
- 1/2 cup grated Parmesan cheese, plus extra for serving
- Salt and black pepper, to taste
- 1/4 cup reserved pasta water
- 1 tbsp fresh lemon juice (optional)
Instructions
- Prep: Preheat oven to 425°F (220°C). Bring large pot of salted water to boil for pasta.
- Roast sprouts: Toss Brussels sprouts with 2 tbsp olive oil, salt, and pepper. Spread on baking sheet and roast for 20-25 minutes until caramelized, flipping halfway.
- Cook pasta: Cook pasta 1 minute less than package directions. Reserve 1/2 cup pasta water before draining.
- Make sauce: In large skillet, heat 1 tbsp olive oil over medium. Add garlic and red pepper flakes, cooking 30 seconds until fragrant. Add cream, 3/4 cup Parmesan, and lemon juice, stirring until smooth.
- Toast breadcrumbs: In small pan, toast panko with 1 tsp olive oil until golden (2-3 minutes). Set aside.
- Combine: Add drained pasta and roasted sprouts to sauce. Toss, adding reserved pasta water as needed to create silky sauce. Season with salt and pepper.
- Serve: Top with remaining Parmesan, toasted breadcrumbs, and fresh parsley.
Notes
- For vegan version: Use nutritional yeast instead of Parmesan and coconut cream
- Add pancetta or bacon for extra flavor (cook before garlic)
- Leftovers reheat well with a splash of water or milk
- Thinly sliced sprouts can be used instead of halved for quicker roasting
