Description

Delightful wraps combining the flavors of bruschetta and pesto, filled with grilled chicken, fresh mozzarella, and juicy tomatoes for a quick and tasty meal.


Ingredients

  • 34 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup fresh basil pesto
  • 8 oz fresh mozzarella cheese (sliced or mozzarella balls)
  • 2 ripe tomatoes, diced or sliced
  • 4 large flour tortillas (whole wheat or regular)
  • Optional: balsamic glaze, for drizzling

Instructions

  1. Preheat a grill or stovetop pan over medium-high heat. Season the chicken breasts with salt and pepper.
  2. Grill the chicken for about 6–7 minutes on each side until fully cooked and no longer pink inside.
  3. Remove the chicken from heat and let it rest for about 5 minutes, then slice into thin strips.
  4. Lay tortillas flat and spread a generous layer of basil pesto across the center of each.
  5. Layer the sliced chicken, mozzarella, and tomatoes down the center of each tortilla.
  6. Fold in the sides of the tortilla and roll tightly from one end to the other. Cut in half if desired.
  7. Drizzle with extra pesto or balsamic glaze if using, and serve immediately.

Notes

For best results, grill chicken to 165°F and make sure not to overcrowd the grill.
