Ingredients

  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup creamy peanut butter
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Mix melted butter and sugar until smooth. Add eggs one at a time, then vanilla.
  3. Whisk flour, cocoa powder, baking powder, and salt in separate bowl. Gradually mix into wet ingredients.
  4. Drop dough by spoonfuls onto baking sheets. Bake 10-12 minutes until set. Cool completely.
  5. Beat peanut butter, powdered sugar, and milk until smooth. Spread over cooled cookies.
  6. Heat cream until simmering, pour over chocolate chips. Let sit 2 minutes, then stir until smooth.
  7. Drizzle ganache over frosted cookies. Let set before serving.

Notes

  • Don’t overbake cookies – they will firm up as they cool
  • For thicker ganache, use more chocolate chips
