Description

Delightful brownie cups topped with creamy peanut butter balls that pack a punch of flavor in a single bite.


Ingredients

  • 1/2 cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1 cup creamy peanut butter
  • 1/4 cup powdered sugar
  • 1/4 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (177°C).
  2. Cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well. Stir in vanilla.
  3. Sift together cocoa powder, flour, salt, and baking powder. Gradually mix into the wet ingredients.
  4. Grease or line a mini muffin tin. Fill each cup about 2/3 full with batter.
  5. Bake for 10-12 minutes, or until a toothpick comes out with a few moist crumbs.
  6. Allow to cool slightly in the pan.
  7. Mix peanut butter and powdered sugar until smooth.
  8. Top cooled brownie bites with the peanut butter mixture.
  9. If desired, melt chocolate chips and drizzle over peanut butter topping.
  10. Let them set for about 30 minutes before serving.

Notes

These brownie bites can be stored in an airtight container for up to 3 days or refrigerated for a week. They freeze well for up to 3 months.
