- 1/2 cup unsalted butter (room temperature)
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1 cup creamy peanut butter
- 1/4 cup powdered sugar
- 1/4 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (177°C).
- Cream together butter and sugar until light and fluffy. Add eggs one at a time, mixing well. Stir in vanilla.
- Sift together cocoa powder, flour, salt, and baking powder. Gradually mix into the wet ingredients.
- Grease or line a mini muffin tin. Fill each cup about 2/3 full with batter.
- Bake for 10-12 minutes, or until a toothpick comes out with a few moist crumbs.
- Allow to cool slightly in the pan.
- Mix peanut butter and powdered sugar until smooth.
- Top cooled brownie bites with the peanut butter mixture.
- If desired, melt chocolate chips and drizzle over peanut butter topping.
- Let them set for about 30 minutes before serving.
Notes
These brownie bites can be stored in an airtight container for up to 3 days or refrigerated for a week. They freeze well for up to 3 months.
