- 900g chicken wings (drumettes and flats)
- 120ml pineapple juice
- 60ml soy sauce
- 55g brown sugar
- 2 garlic cloves, minced
- 1 tsp fresh ginger, grated
- 60ml pineapple chunks
- 8g cornstarch
- 30ml water
- Salt and black pepper, to taste
Instructions
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the pineapple juice, soy sauce, brown sugar, minced garlic, and grated ginger until the sugar dissolves.
- Add the chicken wings to the marinade bowl, ensuring they’re fully coated. Cover and refrigerate for 30 minutes.
- Place the marinated wings on the lined baking sheet in a single layer. Sprinkle with salt and pepper. Bake for 25–30 minutes or until golden brown and cooked through.
- While the wings are baking, whisk the cornstarch with water to form a slurry. In a saucepan, pour the leftover marinade and add the pineapple chunks. Bring to a simmer, then slowly whisk in your cornstarch slurry. Simmer until thickened, about 3-5 minutes.
- Once baked, transfer the wings to a large bowl. Drizzle the thick glaze over the wings and toss to coat. Serve immediately.
Notes
For extra crispy wings, broil for the last 2-3 minutes of baking.
