Description

A sweet and savory chicken dish featuring a delightful blend of brown sugar, pineapple, and soy sauce, perfect for any occasion.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup brown sugar, packed
  • 1 cup fresh pineapple chunks
  • ½ cup soy sauce
  • ¼ cup ketchup
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Chopped fresh cilantro (for garnish)

Instructions

  1. Season the Chicken: Sprinkle salt and pepper on both sides of the chicken breasts.
  2. Heat the Oil: In a skillet, heat vegetable oil over medium-high heat until shimmering.
  3. Sear the Chicken: Add chicken breasts and sear for 4-5 minutes on each side until golden brown, then remove from skillet.
  4. Prepare the Sauce: In the same skillet, combine brown sugar, soy sauce, ketchup, minced garlic, and ground ginger; stir well.
  5. Add Pineapple: Toss in the pineapple chunks and stir to coat them in the sauce.
  6. Return Chicken: Put the seared chicken back into the skillet, coating with the sauce.
  7. Simmer: Reduce heat to low, cover, and simmer for 20-25 minutes.
  8. Check Doneness: Ensure internal temperature reaches 165°F (75°C).
  9. Garnish: Sprinkle fresh cilantro on top.
  10. Serve: Transfer chicken to a platter and drizzle with remaining sauce.

Notes

Avoid overcooking the chicken to keep it juicy. Can be made ahead of time by marinating the chicken in the sauce.
