- 1 cup (226g) unsalted butter
- 3 1/2 to 4 cups (420-480g) powdered sugar, sifted
- 2–4 tablespoons milk or heavy cream
- 1 tablespoon vanilla extract
- 1/4 teaspoon fine sea salt, or to taste
Instructions
- Brown the Butter: Melt the butter in a light-colored saucepan over medium heat, stirring frequently for 5 to 8 minutes until golden and nutty. Transfer to a bowl and cool to room temperature, then chill until solid but soft.
- Whip the Brown Butter: Beat the chilled brown butter in a mixing bowl on medium-high speed for 2 to 3 minutes until creamy and pale.
- Add Sugar and Cream: Gradually mix in the powdered sugar one cup at a time on low speed, adding milk after each addition. Beat on high for 2 to 3 minutes until light and fluffy.
- Add Vanilla and Salt: Stir in the vanilla extract and salt, adjusting consistency as needed with more cream or sugar.
Notes
Store in an airtight container in the fridge for up to one week. Rewhip to restore texture before use.
