Description

A comforting casserole filled with shredded chicken, creamy cheddar, and vibrant broccoli, topped with crunchy Ritz crackers.


Ingredients

Scale
  • 2 cups cooked rice
  • 2 cups cooked, shredded chicken
  • 2 cups broccoli florets
  • 1 cup cheddar cheese, shredded
  • 1 can cream of chicken soup
  • 1/2 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup Ritz crackers, crushed
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the cooked rice, shredded chicken, broccoli, cheddar cheese, cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper until well combined.
  3. Pour the mixture into a greased 9×13 inch baking dish.
  4. In a separate bowl, combine the crushed Ritz crackers with melted butter.
  5. Sprinkle the cracker mixture evenly over the casserole.
  6. Bake for 25-30 minutes, or until bubbly and the topping is golden brown.
  7. Let it cool for a few minutes before serving.

Notes

Can be stored in an airtight container in the fridge for up to 4 days. Can also be assembled a day in advance and baked when ready.
