Description

A comforting breakfast hash featuring crispy bacon, golden potatoes, and perfectly cooked eggs, perfect for any time of day.


Ingredients

  • 4 medium potatoes, diced (Yukon Golds preferred)
  • 4 strips of bacon, chopped
  • 4 large eggs
  • 1 onion, diced
  • 1 bell pepper, diced
  • Salt and pepper to taste
  • Olive oil or butter for cooking

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil or butter over medium heat.
  2. Add the chopped bacon and cook until crispy, about 5-7 minutes.
  3. Remove the bacon and set aside, leaving the fat in the skillet. Add the diced potatoes and cook, stirring occasionally, until golden brown and tender, about 10-15 minutes.
  4. Stir in the diced onion and bell pepper and cook for another 5 minutes.
  5. Create space in the skillet and crack the eggs into the empty space, cooking to your liking.
  6. Stir the bacon back into the skillet, season with salt and pepper, and combine everything.
  7. Serve hot and enjoy!

Notes

For extra crispy potatoes, use a cast-iron skillet. This recipe can be easily doubled for larger gatherings.
