Description

Warm and comforting bran muffins with a crispy top and a tender crumb that nourish your soul.


Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 2 cups wheat bran
  • 1/3 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1 large egg
  • 2 cups buttermilk

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the muffin tins with cooking spray or paper liners.
  3. In a medium bowl, sift together 1 cup of all-purpose flour, baking powder, salt, and baking soda. Add the wheat bran and mix well.
  4. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  5. Add the egg to the butter-sugar mixture and mix until combined.
  6. Gradually mix half of the dry ingredients into the wet mixture.
  7. Stir in 1 cup of buttermilk until smooth.
  8. Mix in the remaining dry ingredients followed by the last cup of buttermilk.
  9. Evenly divide the batter into the muffin tins, filling each cup about 2/3 full.
  10. Bake for 20 minutes or until golden brown and a toothpick comes out clean.
  11. Let the muffins cool in the tin for 10 minutes before transferring them to a wire rack.

Notes

Avoid over-mixing the batter to keep muffins tender. Store in an airtight container at room temperature for up to 3 days.
