- 2 tablespoons olive oil (extra virgin)
- 4 boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- ½ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
- 1 cup orzo pasta
- 2 cups chicken broth
- ½ cup heavy cream
- 1 package (5.2 oz) Boursin cheese (Garlic & Fine Herbs)
- 1 cup fresh spinach, chopped
- ¼ cup grated Parmesan cheese (optional)
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Season the chicken with garlic powder, paprika, salt, and black pepper. Let sit for 10-15 minutes.
- In a large skillet, heat olive oil over medium heat and cook chicken for 4-5 minutes per side until golden and cooked through.
- In the same skillet, toast the orzo for 1–2 minutes until slightly golden.
- Add chicken broth and simmer, covered, for about 8–10 minutes until orzo is tender.
- Stir in heavy cream and Boursin cheese until smooth.
- Add chopped spinach and cook for another 1-2 minutes until wilted.
- Slice the chicken into bite-sized pieces and return to the skillet, warming through.
- Garnish with grated Parmesan and parsley before serving.
Notes
Leftovers can be stored in an airtight container for up to 3 days. Reheat gently with a splash of chicken broth.
