Description

A soulful comfort food delight combining creamy Boursin cheese, tender chicken, and orzo pasta.


Ingredients

  • 2 tablespoons olive oil (extra virgin)
  • 4 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • ½ cup heavy cream
  • 1 package (5.2 oz) Boursin cheese (Garlic & Fine Herbs)
  • 1 cup fresh spinach, chopped
  • ¼ cup grated Parmesan cheese (optional)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Season the chicken with garlic powder, paprika, salt, and black pepper. Let sit for 10-15 minutes.
  2. In a large skillet, heat olive oil over medium heat and cook chicken for 4-5 minutes per side until golden and cooked through.
  3. In the same skillet, toast the orzo for 1–2 minutes until slightly golden.
  4. Add chicken broth and simmer, covered, for about 8–10 minutes until orzo is tender.
  5. Stir in heavy cream and Boursin cheese until smooth.
  6. Add chopped spinach and cook for another 1-2 minutes until wilted.
  7. Slice the chicken into bite-sized pieces and return to the skillet, warming through.
  8. Garnish with grated Parmesan and parsley before serving.

Notes

Leftovers can be stored in an airtight container for up to 3 days. Reheat gently with a splash of chicken broth.
