Description

A creamy, comforting Boursin orzo bake with tender chicken and vibrant vegetables, perfect for quick weeknight dinners.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, diced
  • 1 tbsp olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1 cup uncooked orzo
  • 2 1/4 cups chicken broth
  • 1 (5.2 oz) package Boursin garlic & herb cheese
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 cup baby spinach
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet, heat olive oil over medium heat. Season and sauté the chicken until golden brown, about 5-7 minutes. Remove chicken.
  3. Toast garlic in the same skillet, then add orzo and toast for another minute. Add chicken broth, zucchini, and cherry tomatoes. Stir in Boursin cheese and return the chicken.
  4. Cover and bake for 20 minutes. Uncover, stir in spinach and Parmesan, and bake for an additional 5-10 minutes until orzo is tender.
  5. Garnish with basil or parsley and serve hot.

Notes

For a vegetarian version, substitute chicken with chickpeas. Can store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
