A creamy, comforting Boursin orzo bake with tender chicken and vibrant vegetables, perfect for quick weeknight dinners.

- 1 lb boneless, skinless chicken breasts or thighs, diced
- 1 tbsp olive oil
- Salt and pepper, to taste
- 2 cloves garlic, minced
- 1 cup uncooked orzo
- 2 1/4 cups chicken broth
- 1 (5.2 oz) package Boursin garlic & herb cheese
- 1 cup cherry tomatoes, halved
- 1 zucchini, diced
- 1 cup baby spinach
- 1/4 cup grated Parmesan cheese (optional)
- Fresh basil or parsley, for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a large oven-safe skillet, heat olive oil over medium heat. Season and sauté the chicken until golden brown, about 5-7 minutes. Remove chicken.
- Toast garlic in the same skillet, then add orzo and toast for another minute. Add chicken broth, zucchini, and cherry tomatoes. Stir in Boursin cheese and return the chicken.
- Cover and bake for 20 minutes. Uncover, stir in spinach and Parmesan, and bake for an additional 5-10 minutes until orzo is tender.
- Garnish with basil or parsley and serve hot.
Notes
For a vegetarian version, substitute chicken with chickpeas. Can store leftovers in the fridge for up to 3 days or freeze for up to 3 months.
