Description

A delightful twist on the classic Boston Cream Pie, these cookies feature a rich vanilla cream filling sandwiched between soft cookies, topped with glossy chocolate glaze.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup whipped cream
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and powdered sugar until smooth.
  3. Gradually add the flour and salt, mixing until a soft dough forms.
  4. Stir in the vanilla extract.
  5. Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
  6. Bake for 10-12 minutes or until lightly golden.
  7. Allow to cool completely.
  8. Once cooled, pipe or spread whipped cream between two cookies to form a sandwich.
  9. In a small saucepan, heat the heavy cream until just boiling and remove from heat.
  10. Stir in the chocolate chips until melted and smooth.
  11. Drizzle the chocolate glaze over the assembled cookies.
  12. Refrigerate for about 30 minutes to set before serving.

Notes

For a vegan version, substitute butter with coconut oil and use dairy-free cream alternatives. Ensure the dough is chilled to prevent spreading during baking.
