- 1 cup unsalted butter, softened
- 1 cup powdered sugar
- 2 cups all-purpose flour
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup whipped cream
- 1 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and powdered sugar until smooth.
- Gradually add the flour and salt, mixing until a soft dough forms.
- Stir in the vanilla extract.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until lightly golden.
- Allow to cool completely.
- Once cooled, pipe or spread whipped cream between two cookies to form a sandwich.
- In a small saucepan, heat the heavy cream until just boiling and remove from heat.
- Stir in the chocolate chips until melted and smooth.
- Drizzle the chocolate glaze over the assembled cookies.
- Refrigerate for about 30 minutes to set before serving.
Notes
For a vegan version, substitute butter with coconut oil and use dairy-free cream alternatives. Ensure the dough is chilled to prevent spreading during baking.
